Recommended for Sparkling Base, Late Harvest, Icewine, Fruit Wines, Restarting Stuck Fermentations and Dry Whites.
- Commonly known as "Champagne Yeast".  Also known as Prise de Mousse or PDM yeast.
- Is the original, steady low foamer, and is popular for barrel fermentations. It is an excellent choice for sec­ondary fermentations of sparkling wine. 
- Ferments well at low temperatures and flocculates with compact lees. 
- Under low nutrient conditions Lalvin EC1118 can produce high amounts of SO2 (up to 50 ppm) and, as a result, may inhibit malolactic fermentation.
- Also good for cider.
